Yellow Squash with Kale & Chicken

Time: 30 minutes

Servings: 2

Ingredients:

1½ tablespoons olive oil

1 garlic clove, minced

2 (6-ounce) skinless, boneless chicken breasts, cubed

Salt and freshly ground black pepper, to taste

2 cups fresh kale, trimmed and chopped

2 large yellow squash, spiralized with Blade C

1 tablespoon fresh lime juice

Directions:

1.In a large skillet, heat oil on medium heat.

2.Add garlic and sauté for about 1 minute.

3.Add chicken and sprinkle with salt and black pepper and cook for about 6- 8 minutes or till golden brown from all sides.

4.Add kale and cook for about 2-3 minutes.

5.Stir in squash noodles and lime juice and cook for about 23 minutes.

6.Serve hot.
